…but I can’t find pine nut flour anywhere! Am I going to have to actually grind my own pine nut flour?

There’s actually a recipe book called Balsa’s Table, and it has the recipes for food featured in the Moribito series of novels, but it’s not available in English or sold in the US, to my knowledge. Damn.
